This is our go-to comfort meal. It’s simple, fast, and flexible depending on what we have on hand.
As my southern mama taught me, every good sauce starts with a good roux.
This is the base we use for everything: biscuits and gravy , chili cheese fries, potatoe soup, gravy bowls ect. You can easily build on it or flavor it depending on your preference.

🥕 Ingredients
• 2 tbsp vegan butter
• 2–3 tbsp flour (gluten-free if needed)
• 2–3 cups plant milk (soy preferred)
• 1 tsp McKay’s vegan chicken-style seasoning
• 1 tsp mushroom seasoning (optional but deepens the flavor)
• salt + black pepper to taste
Optional:
• plant-based sausage, griller crumbles, sautéed mushrooms
• biscuits or hashbrowns for serving
👩🍳 Instructions
1. Melt vegan butter in a skillet over medium heat.
2. Add flour and stir continuously for 1–2 minutes to form a roux.
3. Slowly whisk in plant milk until smooth.
4. Add seasonings and simmer, stirring frequently, until thick and creamy.
5. If using, stir in cooked sausage crumbles or mushrooms.
6. Spoon generously over warm biscuits and serve immediately.
🔥 Flavor Boost Tips
• use chorizo crumbles instead of regular sausage for a deeper, richer flavor or creole seasoning
• add extra black pepper for a classic southern taste
• let it simmer a little longer for a thicker gravy
📝 Recipe Notes
• Cook your sausage or crumbles first, then build the gravy in the same pan for extra flavor.
• Soy milk gives the creamiest texture, but other plant milks work too.
• This is your base gravy, you can easily build from here into other meals.
