Freshly Milled Banana Bread

There’s just something about homemade banana bread with fresh milled flour that feels extra cozy. The flavor is richer, the texture is heartier, and the whole house smells incredible while it bakes.


This version has become our family favorite because it’s simple, flexible, and kid-friendly. I blend the bananas completely smooth with an immersion blender so my kids never end up with banana chunks, and it creates the softest bakery-style texture.



⚠️ Note: This recipe is specifically designed for freshly milled flour, which works best when measured by weight in grams rather than cups.

🥕 Ingredients


Dry Ingredients:


• 300 grams fresh milled soft white wheat flour

• 1½ tsp baking powder

• 1 tsp baking soda

• ½ tsp cinnamon

• 1 tsp salt

• Flax Eggs: 3 tbsp ground flaxseed Combined with 9 tbsp water



Wet Ingredients:


• 3 ripe bananas

• ¾ cup brown sugar

• ⅓ cup oil, melted butter, or applesauce

• 1 tbsp vanilla extract OR 1 tbsp vanilla bean powder



Optional Add-Ins:


• chopped walnuts or pecans

• chocolate chips

• cinnamon sugar topping



👩‍🍳 Instructions


  1. Preheat oven to 350°F.

  2. Prepare flax eggs by mixing flaxseed and water. Let sit 5–10 minutes until thickened.

  3. Cut parchment paper to fit your loaf pan.


    Optional: crumple and lightly dampen the parchment before pressing it into the pan for an easier fit.

  4. Add bananas to a large bowl.

  5. For a smooth kid-friendly texture, use an immersion blender to blend the bananas completely smooth.

    OR mash with a fork or potato masher for traditional banana bread texture.

  6. Add brown sugar, oil/applesauce, vanilla, and flax eggs. Stir well.

  7. Add flour, baking powder, baking soda, cinnamon, and salt.

  8. Stir until just combined. Do not overmix fresh milled flour.

  9. Fold in optional mix-ins if desired.

  10. Pour batter into a greased or parchment-lined loaf pan.

  11. Bake:

    • Loaf: 55–65 minutes

    • Muffins: 18–24 minutes

  12. Cool 15–20 minutes before slicing.



❤️ Final Note


Fresh milled flour banana bread honestly tastes so much richer and heartier than store flour versions. Between the vanilla, cinnamon, and sweet bananas, this one disappears fast in our house.
