This recipe was never planned but it’s now a comfort food staple.
It started as biscuits and gravy until one morning I didn’t have biscuits.
So I used fries.
Then another day I accidentally bought chorizo grilled crumbles.
And that sounded perfect with chili beans.
And somehow this became the perfect chili cheese fries recipe.

🥕 Ingredients
• 1 package chorizo crumbles
• 2 tbsp vegan butter
• 2 to 3 tbsp flour
• 2 to 3 cups plant milk (soy preferred)
• 1 tsp vegan chicken-style seasoning
• 1 tsp mushroom seasoning
• salt and black pepper to taste
• 1 can chili beans (see notes)
• cooked fries or potatoes for serving
👩🍳 Instructions
1. Cook the chorizo in a skillet over medium heat until warmed through and slightly browned.
2. Add the vegan butter and let it melt into the chorizo.
3. Sprinkle in the flour and stir for 1 to 2 minutes to form a roux.
4. Slowly whisk in the plant milk until smooth.
5. Add the seasonings and let it simmer until thick and creamy.
6. Add the chili beans and stir to combine.
7. Let it simmer another 3 to 5 minutes until thick and scoopable.
8. Pour over hot fries and serve right away.
🔥 Flavor Boost Tips
• let it cook a little longer if you want it thicker
• the chorizo brings most of the flavor so keep the seasonings simple unless using unseasoned plant based meat.
• add a little extra black pepper or hot sauce if you want more bite

• For the chorizo version
Drain the beans but do not rinse
• For a thinner sauce
Do not drain the beans
• If using regular griller crumbles instead of chorizo
Do not drain the beans so you keep the extra flavor
• Soy milk gives the creamiest texture
